San Juan Bosco
Canton San Juan Bosco. It is a canton of the Province of Morona Santiago, Ecuador. Its cantonal head is the city of San Juan Bosco.
San Juan Bosco is one of the twelve cantons of the Province of Morona Santiago, is located in the south east of the Ecuadorian Amazon region, bounded on the north by the Limón Indanza Canton, on the south by the Gualaquiza Canton and the Republic of Peru, this one with the republic of Peru, and to the west with the cantons Gualaceo and Sígsig of the Province of Azuay. It has tourist attractions such as: Sugar Loaf, El Cóndor Park, Roca del Gallo Cave, Chumbique Hill, El Chorro Waterfall, Sugar Loaf River, Huayjas Falls, Yavinse Waterfall and more.
Its gastronomy ranges from Yucas with quesillo, Caldo Gallina to a Cuy Asado. In this area, products such as sugarcane, cassava, arabica coffee, and Chinese potatoes are grown, among others.

Typical Foods of San Juan Bosco
Chicha de caña: Get fresh guarapo. Boil the cane juice for 20 minutes, remove it from the heat and let cool. Place in a bowl add one or two cups of another guarapo that is very fermented.
Fried yucca: Peel the yucca, wash and cut. Put the lard in a pan and bring it to a boil. Toss the cassava chips and fry until golden brown. Serve them with guayusa.
